Salmon Pesto Pasta

Delicious flakes of wild salmon, nestled in noodles and creamy garlic scape pesto.

Salmon Pesto Pasta

I love pasta far too much to jump on the carb-free wagon. And even if I did, this super simple, bursting with flavour dish, that combines some of my faviourite ingredients, would have me leaping right off that wagon.

Ingredients For Garlic Scape Pesto

  • 1 cups chopped garlic scapes
  • 3 cups torn basil leaves
  • 1/2 cup  walnut pieces
  • 1 tbsp lemon juice
  • 1/2 cup olive oil
  • 2 tbsp ground parmesan cheese

I had no idea what to do with the ‘frilly” bit on my garlics, I didn’t even know you could eat them! After making this pesto, I don’t think I’ll go back to making it with the garlic bulbs – this pesto has a much more delicate flavour that really complements the salmon.

There’s nothing more I love than combining produce from the garden with Harry’s fresh caught seafood.

Ingredients For Salmon Pesto Pasta

  • large handful spagetti
  • 3/4 cup pesto
  • 1 cup flaked cooked salmon OR
  • 1 can salmon
  • 2 tbsp ground parmesan cheese

If you have some leftover salmon this is a great way to finish it up – alternatively use canned salmon – but buy the good stuff! We process our own at home, if you are not so lucky as us to have access to the ocean – then please buy from a reputable seller, and only buy sustainable seafood.

This recipe is awesome as is, but you can add a handful of wilted spinach if you like.

Step by Step Instructions

Step 1

Blned all the ingredients for the pesto until it’s smooth  & creamy paste. Add more oil if needed, it has to coat the pasta, so it shouldn’t be too ‘pasty’

Step 2

Cook the spagetti according to instructions and drain.

Step 3

Return the drained spagetti to the hot pan and add the pesto stirring until all the spagetti is coated. (you can put the pan on a very low heat to keep the pasta cooling down)

Step 4

Add the flaked salmon to the pasta.

Step 5

Serve with parmesan cheese.
