BBQ Salmon Brine

The great thing is about this recipe is that you can tweak it as many times as you like. You can add your own flavours.  Just be careful that you don’t use anything too over-powering any take away from the flavour of the fresh fish.

Ingredients

  • 2 cups soy sauce
  • 1.5 cup Teriyaki Marinade
  • 1 cup brown sugar
  • 1/2 cup olive oil
  • 1 tsp garlic powder
  • 1/2 cup Dijon mustard
  • 1 small chunk ginger root
  • 3 oranges, quartered
  • 2 lemons quartered
  • 2 green onions, chopped (optional

The oranges and lemons in the brine smooth out the flavour and add a hint of sweetness.

Mix all the ingredients together in a large bowl. Place salmon fillets or steaks in the mixture and allow to marinate in the fridge overnight – or as long as possible.

Take the fillets/steaks out, drain off excess liquid and cook immediately on a hot grill or BBQ.
